Passionate about good food and exceptional products, Charles chose to enter the restaurant world right after high school. This environment, both intense and captivating, quickly won him over. After graduating from the Institut de tourisme et d'hôtellerie du Québec (ITHQ), he gained experience in various restaurants where he developed essential skills such as rigor, organization, teamwork, and many other qualities that shape and define an excellent cook.
